It’s crawfish time in south Louisiana. Did you know that for many years, crawfish was not considered food outside Cajun country? In fact, people north of Alexandria were more likely to have a fish fry than a crawfish boil.

Finally folks wised up. Now crawfish is enjoyed not only all over the state, but also all over the United States.
