It’s the most wonderful time of the year — Carnival, aka King Cake Season. While traditionalists usually flock to the brioche-based king cake— ring-shaped and laced with cinnamon, covered in icing and purple, green and gold sugar, with a plastic baby hidden inside— these days there are plenty of twists on the original, plus a growing appreciation for the elegant French puff pastry and almond cream version.
