New Brewpub Will Bring Acclaimed Chef’s Viet-Cajun Creations to Bywater - [Eater New Orleans - All]

Bywater Brewpub’s kitchen will be led by Anh Luu, a New Orleans native who owned a Viet-Cajun restaurant in Portland

The Bywater neighborhood is getting a new 75-seat brew pub, and the kitchen will be led by talented New Orleans native Anh Luu, who most recently owned a successful Viet-Cajun restaurant in Portland before returning to the city last year.

Creatively called Bywater Brewpub, Gambit reports that the restaurant and microbrewery will serve five to eight beers and the Vietnamese-Cajun mashup items Luu cooks, like crawfish etouffee nachos and double-fried chicken wings with brown butter fish sauce.

Luu was born in New Orleans to Vietnam War refugees, ending up in Portland after Hurricane Katrina derailed her college plans. In 2013, Luu became head chef at Portland restaurant Tapalaya, where she became known for viral phorrito pop-ups and earned rave reviews. After five years and a semifinalist nod for Eater Young Guns 2016, she bought Tapalaya from owners in 2017. Last year she sold the restaurant and returned to New Orleans following the death of her mother.

Bywater Brewpub is located in the former Copperworks warehouse building at 3000 Royal Street, a former glassblowing studio (Mitchell Gaudet’s Studio Inferno, now in Arabi). Owner Nahum Laventhal tells Gambit that Sonny Day, previously at Urban South Brewery and Abita Brewing Co., will oversee the beer.

Laventhal expects to open Bywater Brewpub in April.
