Yotam Ottolenghi’s recipes for New Orleans gumbo and banana and cardamom tart | The Guardian

Gumbos vary tremendously from region to region, from family to family, from pot to pot. In the 19th century, for example, the Creole people of the city thickened their gumbos with okra or, in winter, when okra wasn’t available, with the ground leaves of the sassafras tree, known as filé powder; these days, either or both are used. In Cajun country, meanwhile, just outside New Orleans, they use a flour-and-oil-based roux (darker and richer than any French roux I’ve seen), as a base and thickener; they may or may not add filé to their gumbo, while some modern Creole versions use roux, too, only not as dark and not so much of it. See what I mean now about cryptic?

As for those bits floating about in the gumbo, I couldn’t find two people who agreed on what goes into a traditional one, be it Creole or Cajun. Seafood (often crab, shrimp and oysters) feature in many versions, as do chicken and duck; for extra flavour, the local smoked andouille sausage is another popular addition, along with tasso, a cured smoked pork shoulder a bit like ham that’s flavoured with cayenne and garlic.

My version is modeled on the spice mixes of Paul Prudhomme and Emeril Lagasse.

Learning How to Cook Like a New Orleans Native‎ | Shape Magazine (blog)

During my weekend trip, my traveling buddy and friend, Joanna (from Seven Hills) and I participated in a cooking demonstration at the New Orleans School of Cooking. We had front row seats for two hours of mixing, stirring, story telling and taste testing. We learned how to make some famous New Orleans dishes: Chicken and Smoked Sausage Gumbo, Jambalaya, and arguably my new favorite cookie, Pralines. We were also introduced to a new spice, Joe's Stuff. I highly recommend it if you're into a little adventure in your mouth. If you like beer, I also recommend Abita. It's a beer that was founded in the piney woods of a little town 30 miles north of New Orleans called Abita Springs. Abita can be purchased just about anywhere; if you haven't tried it, I recommend picking it up the next time you're grilling or having folks over for a fall fête.

Recipe Creole Tomato Jam | NOLA.com

Tomato jam, a cross between marmalade and ketchup, has been the rage on goat cheese (or any kind of cheese) and sandwiches (try it on turkey burgers) since Mark Bittman published a recipe for it in The New York Times a few years ago.
